Almond Butter Cups

Almond Butter CupsIngredients
  • 1 cup of almond butter
  • 2 Tbsp. xylitol (ground to a powder using a mortar and pestle)
  • 2 -3 oz. bars of 85-88% dark chocolate
  • 2 Tbsp. of melted coconut oil
Instructions
  1. melt the dark chocolate over a double boiler
  2. mix in the coconut oil
  3. pour melted chocolate into cupcake papers to cover the bottom of the cups
  4. mix together almond butter and xylitol
  5. take a Tablespoon of the almond butter-xylitol mix and drop into paper cups
  6. pour remainder of melted chocolate into the cups
  7. place in the freezer for 20 minutes to set
