Chocolate Covered Almond Bites

Chocolate Covered Almond BitesIngredients
  • 1 cup Raw Almonds
  • 10 Whole Pitted Dates
  • 1/2 cup Flaked Unsweetened Coconut
  • 2 Tbsp. Unsweetened Cocoa
  • 3 Tbsp. Melted Coconut Oil
  • 1/8 tsp. Salt
  • 1 Bar of 85-89% Dark Chocolate
Instructions
  1. In a food processor, blend the almonds, dates, coconut, cocoa, salt & 2 Tbsp. of melted coconut oil
  2. Form mixture into balls and set aside
  3. In a double boiler, melt the dark chocolate bar & 1 Tbsp. of coconut oil
  4. Coat the almond date balls with dark melted chocolate
  5. Chill in the refrigerator to set for about an hour
  6. Place into mini cupcake papers
