Chocolate Covered Almond Bites
Ingredients
- 1 cup Raw Almonds
- 10 Whole Pitted Dates
- 1/2 cup Flaked Unsweetened Coconut
- 2 Tbsp. Unsweetened Cocoa
- 3 Tbsp. Melted Coconut Oil
- 1/8 tsp. Salt
- 1 Bar of 85-89% Dark Chocolate
Instructions
- In a food processor, blend the almonds, dates, coconut, cocoa, salt & 2 Tbsp. of melted coconut oil
- Form mixture into balls and set aside
- In a double boiler, melt the dark chocolate bar & 1 Tbsp. of coconut oil
- Coat the almond date balls with dark melted chocolate
- Chill in the refrigerator to set for about an hour
- Place into mini cupcake papers
