Fresh Fruit topped with Coconut Cream
Ingredients
- 2 cans of unsweetened coconut milk (chilled) We like the Thai Kitchen brand.
- 2 Tbsp. of xylitol (for sweetness)
- 1 tsp. of vanilla extract
- fresh peaches
- pineapple
- blueberries
- strawberries
- fresh mint for garnish
Instructions
- open the chilled coconut milk & scoop the cream off the top, the bottom part of the can will be liquid which can be used for a beverage later
- mix the xylitol & vanilla extract into the chilled coconut cream, if you prefer stevia for your sweetener, use that
- layer the fruit & sweetened coconut cream into mini trifle bowls or cups
- garnish with fresh mint
