Gluten Free Blueberry Muffins

Gluten Free Blueberry MuffinsIngredients
  • 2 cups of almond meal
  • 4 eggs
  • 4 Tbsp. of Xylitol
  • 1 tsp. of aluminum free baking powder
  • dash of salt
  • 1 tsp. of vanilla extract
  • 2 Tbsp. of melted coconut oil
  • 1 cup of blueberries
  • 1 cup of walnuts
  • sprinkle of cinnamon
Instructions
  1. Preheat oven to 350 F.
  2. mix all wet ingredients together
  3. add in blueberries & walnuts
  4. place baking papers in muffin tin
  5. fill each paper with batter
  6. bake for 30 minutes
  7. sprinkle with cinnamon
  8. enjoy with some green tea!
