Gluten Free Blueberry Muffins
Ingredients
- 2 cups of almond meal
- 4 eggs
- 4 Tbsp. of Xylitol
- 1 tsp. of aluminum free baking powder
- dash of salt
- 1 tsp. of vanilla extract
- 2 Tbsp. of melted coconut oil
- 1 cup of blueberries
- 1 cup of walnuts
- sprinkle of cinnamon
Instructions
- Preheat oven to 350 F.
- mix all wet ingredients together
- add in blueberries & walnuts
- place baking papers in muffin tin
- fill each paper with batter
- bake for 30 minutes
- sprinkle with cinnamon
- enjoy with some green tea!
