Healthier Chicken Pot Pie
Ingredients For Filling
1 cup of coconut oil
1 diced yellow onion
4 cloves of garlic, chopped
2 diced chicken breasts
1/4 cup chopped parsley
1 diced sweet potato
chopped carrots
frozen peas
3 cups of chicken broth
1 cup of coconut milk
dash of nutmeg
sea salt to taste
cracked pepper
cayenne pepper (optional)
1 jalapeño pepper (optional)
Thickening agent for filling if desired
2 Tbsp. coconut meal
2 Tbsp. butter
Ingredients For Crust
(Mix together to form dough)
2 cups of almond meal
3/4 cup of coconut oil (melted)
1 egg
sea salt
cracked pepper
dash of nutmeg
Instructions
preheat oven to 350 degrees
sauté the diced onion and chopped garlic in coconut oil
add the diced chicken, salt and pepper
add the parsley and the rest of the vegetables, add the jalapeños and cayenne if desired
add the chicken broth and simmer
on low heat, add the coconut milk, coconut meal, butter and dash of nutmeg
pour chicken mixture into a glass baking dish
roll out dough for crust until flat
place over chicken mixture and pinch ends until a seal is formed
sprinkle with salt, pepper, nutmeg and cayenne if desired
bake in the 350 degree oven for 20 minutes or until crust is set
