Coconut Lemon Balls

Ingredients
  • 1 1/2 cups almond meal
  • 1 1/2 cups dried, shredded, unsweetened coconut
  • 1/2 cups coconut flour
  • 2 pinches of salt
  • 6 Tbsp xylitol
  • 2 Tbsp vanilla extract
  • 2 Tbsp lemon zest
  • 1/4 cup lemon juice
  • 3/4 cup of coconut oil
Instructions
  1. melt the coconut oil until liquid, set aside
  2. grate the lemon peel creating the lemon zest
  3. add the vanilla extract, xylitol & lemon juice to the lemon zest
  4. mix all dry ingredients in a separate bowl
  5. slowly mix wet ingredients into the dry, adding the coconut oil in last
  6. form into balls with your hands
  7. roll balls in the shredded coconut
  8. chill in the refrigerator
  9. enjoy with a hot cup of green tea!
