Ingredients
- 1 1/2 cups almond meal
- 1 1/2 cups dried, shredded, unsweetened coconut
- 1/2 cups coconut flour
- 2 pinches of salt
- 6 Tbsp xylitol
- 2 Tbsp vanilla extract
- 2 Tbsp lemon zest
- 1/4 cup lemon juice
- 3/4 cup of coconut oil
Instructions
- melt the coconut oil until liquid, set aside
- grate the lemon peel creating the lemon zest
- add the vanilla extract, xylitol & lemon juice to the lemon zest
- mix all dry ingredients in a separate bowl
- slowly mix wet ingredients into the dry, adding the coconut oil in last
- form into balls with your hands
- roll balls in the shredded coconut
- chill in the refrigerator
- enjoy with a hot cup of green tea!
