Coconut Macaroons
Ingredients
- 6 egg whites
- 2 1/2 cups of unsweetened shredded coconut
- 1/4 cup of xylitol
- 1 tsp. of vanilla extract
- 1/2 tsp. of cinnamon
- 1/4 tsp. of salt
- coconut oil spray
Instructions
- Mix egg whites until stiff peaks form
- Fold in xylitol, salt, and vanilla.
- Mix in coconut and cinnamon
- Drop on baking sheet coated with coconut oil
- Bake at 325F for 12-15 min.
These delicious gluten free macaroons are sweetened with xylitol. Coconut contains lauric acid which has unique anti-microbial qualities which boost the immune system. Coconut is high in dietary fiber, aids digestion and helps many thyroid conditions.
