Coconut Macaroons

Coconut MacaroonsIngredients
  • 6 egg whites
  • 2 1/2 cups of unsweetened shredded coconut
  • 1/4 cup of xylitol
  • 1 tsp. of vanilla extract
  • 1/2 tsp. of cinnamon
  • 1/4 tsp. of salt
  • coconut oil spray
Instructions
  1. Mix egg whites until stiff peaks form
  2. Fold in xylitol, salt, and vanilla.
  3. Mix in coconut and cinnamon
  4. Drop on baking sheet coated with coconut oil
  5. Bake at 325F for 12-15 min.

These delicious gluten free macaroons are sweetened with xylitol. Coconut contains lauric acid which has unique anti-microbial qualities which boost the immune system. Coconut is high in dietary fiber, aids digestion and helps many thyroid conditions.
