Coconut Raspberry Balls

Coconut Raspberry BallsIngredients
  • 1 1/2 cups almond meal
  • 1 1/2 cups dried, shredded, unsweetened coconut
  • 1/2 cup chopped macadamia nuts
  • 2 pinches of salt
  • 6 Tbsp. xylitol
  • 2 Tbsp. vanilla extract
  • 2 Tbsp. lemon juice
  • 1 cup of coconut oil
  • 1 cup puréed raspberries
Instructions
  1. melt the coconut oil until liquid, remove from heat & add xylitol & vanilla, stir, set aside
  2. blend the macadamia nuts & add to the almond meal & coconut
  3. purée raspberries and strain seeds out by pressing through a strainer
  4. add xylitol & salt to the raspberry purée
  5. mix the purée into the coconut oil, then add to the dry mixture
  6. form into balls with your hands
  7. roll balls in the shredded coconut
  8. chill in the refrigerator
  9. enjoy with a hot cup of green tea!
