Quiche with a Kick!
Ingredients for filling
1 yellow onion chopped and sautéed
4 diced Campari tomatoes
3 pieces of diced turkey cold cuts
6 eggs
¼ cup of diced jalapeno peppers
Pinch of salt
Fresh cracked pepper
2 teaspoons of cayenne pepper
Ingredients for crust
1 cup of almond meal
½ cup of melted coconut oil
Instructions
Preheat oven to 50 degrees
Combine almond meal & melted coconut oil and spread evenly on bottom of the glass pie pan
Bake crust for approx. 8 minutes until brown, cool for 15 minutes
Combine all filling ingredients in bowl and mix
Once pie crust is cooled, pour filling over crust
Bake for 25-30 minutes or until center of pie is solid
Cool for 30 minutes and enjoy!
