Ingredients for filling
- 1 yellow onion chopped and sautéed
- 4 diced Campari tomatoes
- 3 pieces of diced turkey cold cuts
- 6 eggs
- ¼ cup of diced jalapeno peppers
- Pinch of salt
- Fresh cracked pepper
- 2 teaspoons of cayenne pepper
Ingredients for crust
- 1 cup of almond meal
- ½ cup of melted coconut oil
Instructions
- Preheat oven to 50 degrees
- Combine almond meal & melted coconut oil and spread evenly on bottom of the glass pie pan
- Bake crust for approx. 8 minutes until brown, cool for 15 minutes
- Combine all filling ingredients in bowl and mix
- Once pie crust is cooled, pour filling over crust
- Bake for 25-30 minutes or until center of pie is solid
- Cool for 30 minutes and enjoy!
