Quiche with a Kick!Ingredients for filling
  • 1 yellow onion chopped and sautéed
  • 4 diced Campari tomatoes
  • 3 pieces of diced turkey cold cuts
  • 6 eggs
  • ¼ cup of diced jalapeno peppers
  • Pinch of salt
  • Fresh cracked pepper
  • 2 teaspoons of cayenne pepper
Ingredients for crust
  • 1 cup of almond meal
  • ½ cup of melted coconut oil
Instructions
  1. Preheat oven to 50 degrees
  2. Combine almond meal & melted coconut oil and spread evenly on bottom of the glass pie pan
  3. Bake crust for approx. 8 minutes until brown, cool for 15 minutes
  4. Combine all filling ingredients in bowl and mix
  5. Once pie crust is cooled, pour filling over crust
  6. Bake for 25-30 minutes or until center of pie is solid
  7. Cool for 30 minutes and enjoy!
