Gluten Free Cinnamon; Spice Donuts

Gluten Free Cinnamon & Spice DonutsIngredients
  • For Donut Batter:
  • 4 cups or 1-1 pound bag of Trader Joe's Almond Meal ($4.99)
  • 1 cup of xylitol (use Mortar & Pestle to grind into fine powder)
  • 4 eggs
  • 1/2 cup almond milk
  • 2 Tbsp. of aluminum free baking powder
  • 2 Tbsp. of coconut flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/4 tsp. dried ginger
  • Coconut Oil Spray
For Glaze
  • 6 Tbsp. of xylitol (use Mortar & Pestle to grind into fine powder)
  • 2 Tbsp. of 100% Natural Maple Syrup
  • 1/2 cup of warm water
  • For Cinnamon & Xylitol Dust:
  • 3 Tbsp. of xylitol (use Mortar & Pestle to grind into fine powder)
  • 2 Tbsp. of cinnamon
Instructions
  1. Preheat oven to 350 degrees. Spray coconut oil onto ceramic baking dishes or donut baking molds.
  2. In large bowl combine all ingredients.
  3. Fill each donut mold. If you don't have donut molds, you can form a patty and use a jar to cut out the donut shape and a small shot glass to cut out the inner circle. Bake 20 minutes or until solid to touch.
  4. While donuts are baking, dissolve the powder fine xylitol and maple syrup into water to form glaze. In a separate bowl, combine the powder fine xylitol and cinnamon for the last dusting step.
  5. Once baked, remove the donuts from the mold or unstick from the baking dish. Once cool, coat the donuts with the xylitol maple syrup glaze and dredge donuts in Cinnamon Xylitol powder.
