Healthier Stuffing for the Holidays
Ingredients for almond flour bread
- 3 cups of almond flour
- 3 eggs
- 1 Tbsp. of aluminum free baking powder
- dash of salt
- coconut oil or butter
Instructions for almond flour bread
- mix all ingredients together, use coconut oil or butter to grease baking dish
- poor thick batter into a glass baking dish
- bake in a 350 degree oven for 20 minutes or until crisp on top, let cool
Ingredients for stuffing
- 1 chopped yellow onion
- 1 chopped bunch of celery stalks
- 1 bunch of freshly chopped parsley
- an assortment of your favorite fresh mushrooms: Maitake, Crimini, Shitake, Oyster
- an assortment of dried mushrooms: Morel, Chanterelle
- 2 cups of chicken broth or vegetable broth
- cup of dried cranberries or golden raisins
- olive oil
- sea salt
- cracked pepper
Instructions for Stuffing
- Soak the dried mushrooms in chicken broth until soft
- Saute yellow onion, celery & parsley in olive oil, add in all assorted mushrooms that have been chopped, add chicken stock and bring to a light boil, salt & pepper then simmer
- crumble the almond bread into the vegetable mix, add cranberries
- spread mixture into an oiled baking dish, crisp up in a 350 degree oven for 20 minutes before serving, salt & pepper to finish
Mushrooms are a great source of B-12 vitamins and contain immune boosting properties. The Japanese word "maitake" means "dancing mushroom" because people in ancient times were said to dance for joy when they found these mushrooms, which were literally worth their weight in silver. Modern research on the maitake mushroom and its D-fraction extract began in Japan in the mid-1980s and has only recently spread to the United States.
