Healthier Chicken Strips and Homemade BBQ Sauce
Coconut Mayonnaise to coat the chicken
Ingredients
2 eggs
1 Tbsp. mustard
1 Tbsp. fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup Coconut oil -melted
1/2 cup Olive oil
Instructions
Place the eggs, mustard, lemon juice, salt, and pepper into a food processor or blender. Blend briefly for a few seconds.
With the processor or blender running on low speed, start adding your oils very slowly. Continue blending until all the oil is used up and there is no free standing oil.
Healthier Chicken Strips made with Almond Meal
Ingredients
1 package of chicken tenders
1 cup almond meal
1 1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. Cayenne Pepper
2 cups of Coconut Mayonnaise
coconut oil spray
Instructions
Preheat oven to 350 F. & spray coconut oil on a baking dish
Add salt, pepper, cayenne to the almond meal
Coat the chicken in the Coconut Mayonnaise
Once coated, dredge the chicken in the almond meal until completely covered
Place coated chicken in the baking dish and bake for 35 minutes
Homemade BBQ Sauce
Ingredients
1/2 cup of ketchup (no high fructose corn syrup)
2 tbsp. cider vinegar
2 tbsp. maple syrup
2 tbsp. grated onion
2 tsp. mustard
1/2 tsp. ground thyme
1/4 tsp. cayenne pepper
Instructions
Blend all ingredients in a food processor
Use as a dipping sauce or brush on meat or poultry during last, 10 to 20 minutes of grilling
