Ratatouille

RatatouilleChop All Ingredients & Add to Pot over medium high heat in this order
  • 1/2 cup of olive oil
  • 2 yellow onion
  • 5 garlic cloves
  • 2 eggplant (chopped, salted & rinsed)
  • 4 zucchini
  • 4 bell peppers with seeds & stem removed (1red, 1orange, 1yellow & 1green)
  • 20 fresh basil leaves
  • 1 cup chopped parsley
  • 4 large tomatoes
  • cracked pepper
  • sea salt to taste

Ratatouille (pronounced rat-ə-TOO-ee ) is a traditional French stewed vegetable dish, originating in Nice. Ratatouille is extremely low in fat and calories, but high in nutrients.
