Ratatouille
Chop All Ingredients & Add to Pot over medium high heat in this order
- 1/2 cup of olive oil
- 2 yellow onion
- 5 garlic cloves
- 2 eggplant (chopped, salted & rinsed)
- 4 zucchini
- 4 bell peppers with seeds & stem removed (1red, 1orange, 1yellow & 1green)
- 20 fresh basil leaves
- 1 cup chopped parsley
- 4 large tomatoes
- cracked pepper
- sea salt to taste
