Zucchini Crisps

Zucchini CrispsIngredients
  • 1-2 sliced zucchini
  • 1 cup almond meal
  • 1 cup almond milk
  • sea salt
  • cracked pepper
  • garlic salt
  • coconut oil spray
Instructions
  1. use a mandolin to cut the zucchini into thin uniform slices
  2. pour almond milk in a bowl, in a separate bowl combine a 1/2 teaspoon each of the sea salt, pepper, garlic salt and almond meal
  3. dredge the slices in the almond milk, then into the almond meal mixture
  4. spray coconut oil onto a baking dish, place the coated slices in a layer on the dish, bake for 30 minutes in a 350 degree F oven or until crisp

Zucchini is full of Vitamin C, Folate, Potassium, Beta-Carotene, protein and fiber. It's incredibly low in calories but filled with nutritional value.
